White Peach and Lavender Sangria – Serves 12-15
2 bottles Pinot Grigio or any other light fruity white wine
1/2 cup of dried lavender flowers – Natural Grocers – reserve 1 tablespoon for garnish
6 – ( 3 lb) white peaches pitted and chopped – reserve one peach sliced for pitcher
3 lemons – juice two lemons and slice the other for pitcher
1/2 cup sugar
1 cup water
1. Make simple syrup. Combine water and sugar in small saucepan over medium low heat, stir until sugar is dissolved (about 5 minutes) add lavender, remove from heat and let steep for 30 minutes. Strain syrup through fine mesh strainer to remove flowers.
2. Chop peaches in 1 inch dice, in small batches add peaches and syrup to blender or food processor. Blend until very smooth. With medium sized bowl and mesh strainer on top of it, strain peach mixture into bowl. Push mixture around to extract liquids, let sit over strainer for at least 20 minutes. Add juice from two lemons to mixture.
3. In a pretty pitcher combine wine, peach mixture, one sliced lemon and one sliced peach. Allow mixture to sit in fridge for 4-8 hours for flavors to combine
4. To serve fill glass with ice, fill ¾ with wine mixture and top off with seltzer water. Garnish with a small pinch of lavender flowers and a couple slices of peach from the sangria.
